I am wondering if I can use something to fix the backrest in a higher sitting position (a cushion, maybe?).
Also is there any ride on board compatible with this stroller? Thank you

One thing I know some people do is to take a strap or a belt and fix it on the sidebars so that it supports the backrest higher than the positioning allows. So you could try that to have the seat more upright.
Any universal buggy board should be compatible, however the stroller itself is a very small, compact model, meaning the buggy board will be a bit too much of a strain to it. I can recommend Bumprider or Lascal - they should fit, however I warn you that it can make the push harder and the frame loose over time.
